La d\u00e9coupe \u00e0 la machine se r\u00e9alise essentiellement par des professionnels \u00e0 partir de pi\u00e8ces de jambon serrano d\u00e9soss\u00e9es, puisqu\u2019il n\u2019est pas possible de couper des jambons ou des palettes enti\u00e8res avec ce syst\u00e8me. Ce proc\u00e9d\u00e9 demande une technique pr\u00e9cise et un d\u00e9sossage appropri\u00e9 de la pi\u00e8ce afin de faciliter sa manipulation. Si nous partons du format traditionnel, la premi\u00e8re \u00e9tape est donc de l\u2019\u00e9plucher et de le nettoyer, en \u00e9liminant la cro\u00fbte et la graisse qui recouvre le jambon serrano, et ensuite couper la pi\u00e8ce en trois morceaux afin d\u2019optimiser sa rentabilit\u00e9.
