Ce sont de tout petits grains \u00e0 caract\u00e8re \u00ab\u00a0pl\u00e2treux\u00a0\u00bb qui se forment entre les fibres musculaires de la pi\u00e8ce au fur et \u00e0 mesure du proc\u00e9d\u00e9 d\u2019affinage. L\u2019apparition de ces points blancs sur le jambon serrano peut varier de forme, de taille et de localisation. Cette apparition est due aux changements dans les prot\u00e9ines qui se produisent pendant l\u2019affinage du jambon, qui provoquent la concentration d\u2019acides amin\u00e9s libres.[\/vc_column_text][\/vc_column_inner][vc_column_inner width=\u00a0\u00bb1\/2&Prime;][vc_column_text]<\/p>\n<p>&nbsp;<\/p>\n<p>Il s\u2019agit donc d\u2019un indicateur prouvant que l\u2019affinage a \u00e9t\u00e9 long et lent. Ces points blancs, pr\u00e9sents dans le jambon cru, ne sont <strong>en aucun cas pr\u00e9judiciables \u00e0 la consommation<\/strong> et ne conf\u00e8rent au produit aucune caract\u00e9ristique anormale, plut\u00f4t le contraire, puisqu\u2019ils indiquent que le produit a r\u00e9alis\u00e9 sa maturation correctement.[\/vc_column_text][\/vc_column_inner][\/vc_row_inner][vc_row_inner el_class=\u00a0\u00bbpanel-special-content\u00a0\u00bb][vc_column_inner width=\u00a0\u00bb1\/2&Prime;][vc_single_image image=\u00a0\u00bb2483&Prime; img_size=\u00a0\u00bbfull\u00a0\u00bb][vc_column_text]<\/p>\n<h3><span style=\"color: #e82f37;\"><strong>Assombrissement de la surface de la d\u00e9coupe<\/strong><\/span><\/h3>\n<p>Il se produit en coupant ou en ouvrant une pi\u00e8ce de jambon serrano et en conservant la pi\u00e8ce un certain temps non prot\u00e9g\u00e9e de l\u2019action environnementale, ce qui provoque une oxydation. Il peut se produire la m\u00eame chose avec la graisse, dont la couleur devient plus jaun\u00e2tre. Pour l\u2019\u00e9viter, <strong>il convient de prot\u00e9ger le jambon serrano<\/strong> avec sa propre graisse coup\u00e9e au pr\u00e9alable, avec du papier alimentaire paraffin\u00e9 ou avec du film plastique alimentaire et de le conserver \u00e0 une temp\u00e9rature ad\u00e9quate de r\u00e9frig\u00e9ration et une certaine humidit\u00e9.[\/vc_column_text][\/vc_column_inner][vc_column_inner width=\u00a0\u00bb1\/2&Prime;][vc_single_image image=\u00a0\u00bb2484&Prime; img_size=\u00a0\u00bbfull\u00a0\u00bb][vc_column_text]<\/p>\n<h3><span style=\"color: #e82f37;\"><strong>Voile blanc<\/strong><\/span><\/h3>\n<p>L\u2019apparition du <strong><em>voile blanc<\/em><\/strong> est une alt\u00e9ration qui se forme sur la surface de d\u00e9coupe des jambons. Il est compos\u00e9 la plupart du temps par la tyrosine. Son apparition n\u2019implique pas la perte de vide ou la p\u00e9remption pr\u00e9matur\u00e9e de la pi\u00e8ce en raison d\u2019une contamination ou d\u2019une d\u00e9gradation. Il peut observer en fonction de l\u2019incidence de la lumi\u00e8re sur cette surface. Il ne repr\u00e9sente aucune alt\u00e9ration nutritionnelle ni organoleptique du jambon serrano.<\/p>\n<h3><span style=\"color: #e82f37;\"><strong>Pr\u00e9cipit\u00e9s salins<\/strong><\/span><\/h3>\n<p>Ils apparaissent sur la surface de la d\u00e9coupe. Il s\u2019agit de sels inorganiques qui pr\u00e9cipitent sur la surface en raison de conditions externes de faible humidit\u00e9.
