img_size=&#8221;full&#8221;][\/vc_column_inner][\/vc_row_inner][vc_row_inner][vc_column_inner width=&#8221;1\/2&#8243;][vc_column_text]<\/p>\n<h2><strong><span style=\"color: #e82f37;\">Witte stipjes (tyrosine)\u00a0<\/span><\/strong><\/h2>\n<p>Er kunnen kleine witte stipjes, <strong>tyrosine<\/strong> genaamd, verschijnen op <strong>serranoham<\/strong>. Dit zijn minuscule \u2018gipsachtige\u2019 korreltjes die zich in de loop van het rijpingsproces tussen de spiervezels van de ham vormen. De plaats, de grootte en de vorm van deze witte stipjes op serranoham kunnen vari\u00ebren. De oorzaak ervan zijn veranderingen in de eiwitten tijdens de rijping, waardoor er zich concentraties vrije aminozuren voordoen.[\/vc_column_text][\/vc_column_inner][vc_column_inner width=&#8221;1\/2&#8243;][vc_column_text]<\/p>\n<p>&nbsp;<\/p>\n<p>Het wijst er dus op dat de rijping van de ham lang en traag was. Deze witte stipjes op serranoham <strong>zijn alles behalve schadelijk voor de gezondheid en zijn zeker niet abnormaal<\/strong>, integendeel, ze tonen aan dat de rijping naar behoren is verlopen.[\/vc_column_text][\/vc_column_inner][\/vc_row_inner][vc_row_inner el_class=&#8221;panel-special-content&#8221;][vc_column_inner width=&#8221;1\/2&#8243;][vc_single_image image=&#8221;2483&#8243; img_size=&#8221;full&#8221;][vc_column_text]<\/p>\n<h3><strong><span style=\"color: #e82f37;\">Verdonkering van het snijoppervlak<\/span><\/strong><\/h3>\n<p>Dit gebeurt wanneer een serranoham wordt (aan)gesneden en gedurende een bepaalde tijd niet wordt beschermd tegen de werking van de omgeving, waardoor er zich oxidatie voordoet. Dit kan ook gebeuren met het vet, dat wat geliger kan worden. Om dit te voorkomen <strong>moet de serranoham worden beschermd<\/strong>, hetzij met het eigen vet dat er is afgesneden, hetzij met parafinepapier of huishoudfolie, en moet de juiste temperatuur en vochtigheidsgraad worden nageleefd.[\/vc_column_text][\/vc_column_inner][vc_column_inner width=&#8221;1\/2&#8243;][vc_single_image image=&#8221;2484&#8243; img_size=&#8221;full&#8221;][vc_column_text]<\/p>\n<h3><span style=\"color: #e82f37;\">Witte waas<\/span><\/h3>\n<p>Soms kan er ook een <strong>witte waas<\/strong> verschijnen op het snijoppervlak van de hammen. Deze waas bestaat hoofdzakelijk uit tyrosine. Dit wijst niet op een verlies van vacu\u00fcm of betekent niet dat de ham te vroeg is vervallen wegens verontreiniging of slecht is geworden. Desgewenst kan dit laagje worden verwijderd door het er oppervlakkig af te snijden. Deze waas komt vaker voor bij uitgebeende hammen dan bij serranoham in andere formaten.[\/vc_column_text][\/vc_column_inner][\/vc_row_inner][\/vc_column][vc_column width=&#8221;1\/3&#8243;]\n<div id=\"ersspace-2\"><\/div><style type=\"text\/css\">#ersspace-2 { height: 260px; }\n@media handheld, only screen and (max-width: 767px) {\n\t#ersspace-2 { height: 0px; }\n}<\/style>[vc_row_inner el_class=&#8221;panel-special-aside&#8221;][vc_column_inner][vc_column_text]<\/p>\n<h3><strong><span style=\"color: #e82f37;\">Regenboogeffect<\/span><\/strong><\/h3>\n<p>Kleurverschijnsel (kleurencontrast) op het snijoppervlak van de serranoham en bepaalde delen van de spieren. Dit is zichtbaar afhankelijk van de lichtinval op het snijoppervlak. Het houdt geen enkele nutritionele of organoleptische afwijking van de serranoham in.<\/p>\n<h3><strong><span style=\"color: #e82f37;\">Zoutafzetting<\/span><\/strong><\/h3>\n<p>Verschijnt op het snijoppervlak. Het betreft anorganisch zout dat zich afzet op het oppervlak omwille van de lage omgevingsvochtigheid.
