S\u00e3o pequenos gr\u00e2nulos de &#8220;gesso&#8221; que se formam entre as fibras musculares da pe\u00e7a \u00e0 medida que o processo de cura prossegue. O aspeto destes pontos brancos no presunto Serrano varia em forma, tamanho e localiza\u00e7\u00e3o. Este aparecimento deve-se a altera\u00e7\u00f5es nas prote\u00ednas que ocorrem durante a cura do presunto, que provocam a concentra\u00e7\u00e3o de amino\u00e1cidos livres.[\/vc_column_text][\/vc_column_inner][vc_column_inner width=&#8221;1\/2&#8243;][vc_column_text]<\/p>\n<p>Este \u00e9, portanto, um indicador de que a cura foi longa e lenta. Estes pontos brancos presentes no presunto Serrano n\u00e3o s\u00e3o <strong>de forma alguma prejudiciais ao consumo<\/strong> e n\u00e3o conferem caracter\u00edsticas anormais ao produto, muito pelo contr\u00e1rio, uma vez que indicam que o produto amadureceu adequadamente.[\/vc_column_text][\/vc_column_inner][\/vc_row_inner][vc_row_inner el_class=&#8221;panel-special-content&#8221;][vc_column_inner width=&#8221;1\/2&#8243;][vc_single_image image=&#8221;2483&#8243; img_size=&#8221;full&#8221;][vc_column_text]<\/p>\n<h3><strong><span style=\"color: #e82f37;\">Escurecimento da superf\u00edcie de corte<\/span><\/strong><\/h3>\n<p>\u00c9 produzido cortando ou abrindo um peda\u00e7o de presunto Serrano e mantendo-o desprotegido da a\u00e7\u00e3o ambiental por um certo tempo, produzindo assim oxida\u00e7\u00e3o. O mesmo pode acontecer com a gordura, que se torna mais amarelada. Para evitar isso, <strong>\u00e9 aconselh\u00e1vel proteger o presunto Serrano<\/strong> com a pr\u00f3pria gordura, previamente cortada, em papel encerado ou com um pl\u00e1stico alimentar, e mant\u00ea-lo a uma temperatura de refrigera\u00e7\u00e3o adequada e com um certo grau de humidade.[\/vc_column_text][\/vc_column_inner][vc_column_inner width=&#8221;1\/2&#8243;][vc_single_image image=&#8221;2484&#8243; img_size=&#8221;full&#8221;][vc_column_text]<\/p>\n<h3><span style=\"color: #e82f37;\">V\u00e9u branco<\/span><\/h3>\n<p>O aspeto do <strong>v\u00e9u branco<\/strong> \u00e9 uma altera\u00e7\u00e3o que se forma na superf\u00edcie de corte dos presuntos. \u00c9 composto na sua maioria por tirosina. O seu aspeto n\u00e3o implica a perda do v\u00e1cuo ou expira\u00e7\u00e3o prematura da pe\u00e7a devido a contamina\u00e7\u00e3o ou degrada\u00e7\u00e3o. Se desejado, pode ser simplesmente removido por corte superficial sendo que aparece mais frequentemente em presuntos sem osso do que em outros formatos de presunto Serrano.[\/vc_column_text][\/vc_column_inner][\/vc_row_inner][\/vc_column][vc_column width=&#8221;1\/3&#8243;]\n<div id=\"ersspace-2\"><\/div><style type=\"text\/css\">#ersspace-2 { height: 260px; }\n@media handheld, only screen and (max-width: 767px) {\n\t#ersspace-2 { height: 0px; }\n}<\/style>[vc_row_inner el_class=&#8221;panel-special-aside&#8221;][vc_column_inner][vc_column_text]<\/p>\n<h3><strong><span style=\"color: #e82f37;\">Iridesc\u00eancias<\/span><\/strong><\/h3>\n<p>Fen\u00f3meno crom\u00e1tico (contraste de cores) na superf\u00edcie de corte do presunto Serrano e em certas zonas musculares. Pode ser observado em fun\u00e7\u00e3o da incid\u00eancia da luz naquela superf\u00edcie. N\u00e3o representa qualquer altera\u00e7\u00e3o nutricional ou organol\u00e9tica do presunto Serrano.<\/p>\n<h3><strong><span style=\"color: #e82f37;\">Precipitados salinos<\/span><\/strong><\/h3>\n<p>Aparecem na superf\u00edcie de corte. \u00c9 um sal inorg\u00e2nico que se precipita na superf\u00edcie devido a condi\u00e7\u00f5es externas de baixa humidade. N\u00e3o representa qualquer problema, podendo ser eliminado por corte da primeira fatia.
