Once again, the sector of cured hams has meant an increase in consumption in foreign markets, specifically 10.20% according to data from the AEAT, which consolidates the growth trend in Spanish exports of this product. It is important to highlight the importance of European markets in cured hams, in such a way that the market share of the countries belonging to the European Union represents more than 80% of the exports of this type of products. Within the European Union, the markets of Germany and France are undoubtedly the most important markets, in which in the period of analysis, they also achieved some notable advances in the consumption of Spanish cured ham. Within the Third Countries outside the European Union, Mexico consolidates as an attractive market for Spanish cured ham.
In reference to the turnover volume, it has also increased more than proportionally with respect to the volume increase figure, which means that the level of sales prices for exports has risen slightly. This is a sign that reflects the commitment to recognition by which foreign markets value a quality ham. For the Spanish Serrano Ham Consortium, quality ham is its symbol of identity and one of the main axes as a sustainable internationalization strategy.
