The IX World Congress of Cured Ham held in Toledo last June, closed its three days of meetings and presentations with two maxims to promote the sector: look for complementary markets to those already saturated in the European Union and activate innovation and development projects to solve the technological deficiencies of the sector.
During the three days of the congress, with 25 presentations and 12 thematic sessions, very diverse topics related to the business, technical and nutritional aspects were addressed. There were place to debate about technical issues like the formation of color in products without nitrification, microbial cultures for the preparation of ham and efficient management of saline.
The bussines topics were about two main issues, the importance of seeking markets outside the EU and achieve greater protection of products, as well as monitor and prevent unfair trade policies that aim to eliminate competitors.
After the success of this ninth edition, the celebration of the next congress in Madrid has already been established, which will be organized by the Consortium of Ham Serrano, Interporc, Asici, Anice and Feccic.
